Hi everyone! I have found some awesome recipes that I love! It was Mother's Day and we decided to go to Panera Bread and I got their awesome potato soup! It was great, and we decided to make our own version of the recipe. This recipe is coming from the Better Homes and Gardens: New Cook Book and is on page 378, called "Cream of Vegetable Soup". I used the potato substitution, or add-in, because there are many different types of soup you can make from this recipe. If you are interested in these others, leave a comment.

"Cream of Fresh Vegetable Soup"

1 1/2 cups of chicken broth
1/2 cup of chopped onions
1 cup of sliced potatoes
1/2 teaspoon of dried dill weed ( I did not have this and it turned out just as good :))
2 Tbs of butter of margarine
2 Tbs of all-purpose flour
1/4 Tsp of salt
Few dashes of white pepper ( Once again, I did not have this and I used black, but it is really just for looks)
1 cup of milk

In a saucepan combine chicken broth, chopped onion, and one of the vegetable-seasoning combinations from the chart. (I used potatoes) Bring mixture to boiling. Reduce heat; cover and simmer for the time indicated on the chart or until vegetable is tender. (10 minutes for uncooked, less for cooked) Place half the vegetable mixture in a blender container or food processor. Cover and blend 30 to 60 seconds or till smooth. Pour into bowl. Repeat with remaining vegetable mixture; set all aside. In the same saucepan, melt the butter. Stir in flour, salt, and pepper. Add the milk all at once. Cook and stir till mixture is thickened and bubbly. Stir in the blended vegetable mixture. Cook and stir until soup is heated through. Season to taste with additional salt and pepper. Makes 3 or 4 servings.

In this recipe, we used already cooked potatoes left over from another meal. It turned out great, and took about 10 minutes. Thanks for reading!]

Hey everyone!! Hows it going??? I have been enjoying my weeks off... a lot. So what have you been doing this summer? I would love to hear it. I have been trying to get some more pictures, but that isn't really working out... sorry! Today we went to Gateway Natural Area which is near Ft. Collins, and we had lot of fun. We went on several different bike rides around the area and had a lovely picnic. We saw a lot of the mountains and the river, which was very high due to the snow melt. We love to go up there for the day. I finally was able to get some pictures of the garden (scroll down) so please look. Thanks so much for visiting my blog!!!
